Well there are holes in the floor during the remodeling and touching the plastic water lines between the underbelly and floor in 75F degree weather , I noticed they were wet. They weren't leaking, they were sweating. So what problems do I need to watch out for or pitfalls that need to be avoided. As far as fittings are concerned, what are the best type or most reliable? Crimped, screwed or push on?

Problems could include mold or in extreme cases over time wood rot and the critters that go with damp areas. You could try some foam slip over insulation on the pipes to see if that helps.

As far as fittings go, I use crimp type. I have had about a 50/50 success rate with the push lock type.
