I would install a Kohler cast-iron tub with a Moen tub shower valve.
Then install a man made material on the walls such as Marbleque.
Of course you would need to install 3/8 plywood on walls before the man made wall finish goes on.
Post picture when done.

You will want a direct connect vent and direct connect combustion air .

Window should of been caulked at top,sides and bottom between window and trim.
Allowing water in at the above locations will hold water in contact with trim and siding and eventually rot out siding and trim.

I should have added use smooth wall rigid. Corrugated flex pipe creates more turbulence and traps more grease in each of the folds.

What you are experiencing is something all will realize regarding micro range hood versus just a simple range hood. I would go with the metal roofing, foam board and 1 X strips.
